Tofu Spinach Masti Bake
Ingredients:
- 2 cups tofu cut into small cubes or crumbled
- 2 tsp oil
- 1 tsp butter
- 1 cup boiled pasta of your choice ( macaroni or penne)
- 1 bunch spinach, blanched and chopped roughly
- 1 small chopped onion
- 1 tsp chopped garlic
- 1/2 cup diced capsicums
- Salt and pepper to taste
- 2 tbsp tomato sauce
- ½tsp mixed herbs
- ½ tsp chilli flakes
- 1/4 tsp garam masala powder
- 2 cups white sauce
- 2 -3 tbsp grated cheese
- Assorted nuts and seeds (optional)
- 1 cup mix of sliced baby corn, mushrooms, zucchini (pre-cooked/sauté)
- 8-10 fresh basil leaves
- Olives, sun-dried tomatoes, as desired
Method:
- Prepare all the ingredients for the baked dish.
- Grease a baking dish and pre-heat the oven at 180 degrees celsius.
- Heat oil and butter in a pan and sauté the garlic and onion for a few seconds.
- Then add in the vegetables of your choice and seasoning, herbs and flavourings. Mix well.
- Add in the lightly crumbled tofu and boiled pasta along with the white sauce, herbs, and chilli flakes.
- Add a dash of garam masala powder and fresh basil leaves and give it a nice stir.
- Check for salt and adjust accordingly.
- Transfer this mixture to the greased baking dish and top with grated cheese.
- Bake for 15- 18 mins and serve hot with masala garlic toasties.
