Sweet and Sour Asian Tofu
Ingredients:
- 150gms extra firm or firm tofu
- 2 tbsp oil
- 1 tbsp sliced garlic
- 1 tbsp chopped ginger
- 1 tbsp slit green and red chillies
- 3-4 no slit birds eye chillies
- ½ cup sliced onions
- 4-6 one inch peices of lemongrass
- ½ cup carrots cut into cubes
- 3-4 broccoli florets
- 10-12 snow peas
- 1/2 sliced yellow zucchini
- ½ cup sliced green and red capsicums
- ½ cup sliced green spring onion
- Salt and pepper to taste
- 2 tbsp soy sauce
- 2 tsp chilli vinegar
- 1 tbsp red chilli sauce
- 1 tbsp green chilli sauce
- 2 tbsp crushed roasted peanuts
- 2 tsp honey
- 1 tsp brown sugar
- Water/stock as required to cook
- Cornflour and water solution to thicken.
Method:
- Prepare all the ingredients for the stir fried tofu.
- Heat oil in a wok or pan.
- Add in the garlic, ginger, chillies, and sauté for 15 seconds. Add in the sliced onions and stir well.
- Add in the vegetables of your choice, tofu, seasoning, sauces, and a little stock/water. Allow to cook well.
- Cook for 2-3 mins, stirring occasionally. Add in the chilli vinegar and honey towards the end.
- Finally, garnish with peanuts and greens and serve hot.
- Try the same recipe with shredded chicken or sliced prawns or even fish cubes. You can also try using schezuan sauce as well to make it spicier.
