Take a culinary trip around the world with Prime’s Saturday brunch at Compass SkyView Hotel.

Lately it seems like we can’t get enough of the fabulous F&B outlets and lively events at Compass SkyView Hotel. This trendy property on Sukhumvit Soi 24 harbours not one but two hopping bars, a sleek club and a rooftop lounge offering panoramic views of the city.
Now the luxury hotel provides you with another new reason to visit, as they open doors to a world-class gourmet brunch menu at their premier all-day dining restaurant Prime. The hallmark of this rustic eatery is the industrial chic décor featuring panels of dark wood, exposed red brickwork walls and plush grey sofas, all of which make for a relaxed and laidback dining scene. This is further accentuated by floor-to-ceiling windows that deliver breathtaking views of the bustling shopping haven of Phrom Phong.
Not just your typical buffet arrangement, Prime’s Saturday Brunch is all about customisation. Besides live cooking stations that offer all kinds of Western, Japanese and Thai specialities, there is also a seafood bar, cheese board and dessert counter to appeal to all tastes. Diners are encouraged to converse with the staff and personalise their dishes as well. So be prepared to enjoy a delightful culinary journey, while a DJ keeps the ambience upbeat with a selection of soulful jazz tunes.
Food and Drink
We began our gastronomical adventure at the carving station, where juicy cuts of Roasted ribeye and pork loin were presented on wooden boards, ready to be sliced and placed onto your plate at a moment’s notice. The meats come with a selection of sautéed potatoes and green beans, and can be topped with mushroom gravy or a decadent red wine sauce.
Nearby is the Italian counter, which tempted us with the rich aroma of made-to-order Risotto, difficult to resist for its al dente rice and addictive cream sauce. You can also opt to add grilled salmon, bacon bits, mushroom or ham for extra textures and flavours. The highlight however was the final flourish, as the risotto was poured into a giant cheese wheel, coating the rice with even more cheese before it is served piping hot at your table. The same station offers authentic slices of Seafood pizza and Pasta prepared three ways; aglio e olio, in a tomato sauce or carbonara style.
Making our way towards the other end of Prime, we discovered the seafood bar, where large fresh oysters, prawns and crabs gleamed brightly from their icy perches. This refreshing main course is prepared with the usual condiments including a classic mignonette for the oysters.
Meanwhile, the cheese board offers an impressive spread covering goat, Emmental, cheddar, Brie and blue cheese. This delicious selection is accompanied by generous pieces of parma and coppa ham, adding just the right amount of cold cuts to a velvety cheese platter. Moving on, the salad bar was one of our favourite sections, as the smoked salmon and spicy beef were just some of the toppings that provided a wide range of continental flavours to a healthy plate of mixed greens.
However, for those craving oriental flavours worry not, as Prime also excels with its Asian varieties. There is a Thai station that serves tempting fried noodle dishes, as well as aromatic Hainanese chicken rice, while the Japanese corner offers fresh Sashimi, Tempura and Salmon teriyaki. I opted for the salmon, which was freshly prepared with a sauce that was equally sweet and savoury.
Just next door is every breakfast buffs favourite; the Eggs benedict counter, where perfectly poached eggs are placed atop lightly toasted bread with hash browns, salmon and bits of crispy bacon. The rich hollandaise sauce adds just the right amount of creaminess to soak up the bread without overwhelming the flavourful dish.
Finally, hop on the sugar train and indulge your sweet tooth with the decadent dessert counter. The two highlights are the self-service Chocolate fondue fountain, where you can top your plate with as many chocolate-coated strawberries and marshmallows as you fancy; and the Crêpe station, which offers freshly-made crêpes topped with sprinkles and chocolate or strawberry sauce. There are also ice cream, pancakes and miniature gourmet cakes.
No brunch menu is complete without a few drinks, and Prime goes the extra mile by offering a sublime free-flow of their signature Bloody Mary cocktails and sparkling wine. These classic vodka-based concoctions are a refreshing addition to a breakfast meal, while the bubbly is the perfect accompaniment to the freshly shucked oysters.
For non-alcoholic beverages, try the juice bar which blends fresh pineapple, orange and watermelon with ginger and beetroot for some energising refreshments.
